BRAISED LAMB SHANK WITH POLENTA AND MUSHROOM SAUCE (AGNELLO BRASATO OSSOBUCO)
CHEF'S SUGGESTIONS
- Top with chopped fresh parsley, chives or tarragon
- Top with Gremolata: mixture of: Minced, garlic, chopped parsley and lemon zest
- Add Parmesan or asiago or a little cream to the polenta

VEGAN TIKKA MASALA
Surprisingly, the vegan version is equally delectable as the chicken version. Filled with roasted cauliflower, chickpeas and carrots & coconut milk, you will not miss the meat in this delicious and nutritious sauce. Served over Basmati rice.
Chef's Suggestions
Cook some basmati or brown rice. I love adding butter instead of oil, as it perfuse the rice beautifully.
On the side -
- for vegan toppings, I love having little bowls of any or all of the following: chopped cilantro, toasted coconut, toasted almonds, hot chili peppers,
- for protein rich option, also add grilled prawns, rotisserie chicken plus the vegan toppings
- make Raita by mixing one cup of plain or Greek yoghurt with 1/2 cup of chopped Persian or English cucumbers. Add salt and pepper to taste.
- serve with warm Indian Naan (many brands available at all stores now)

WEST AFRICAN PEANUT SOUP

My top seller. The fresh wild mushrooms & the rich beef bone broth make a magical union in this richly delicious soup. An anti-inflammatory soup, a great way to enhance protein intake w/out heaviness of meats.
Chef's Suggestions
- Use as sauce/base for: Pastas, Gourmet Raviolis, Meatballs, Gourmet Sausages. Add sautéed mushrooms, sprinkle with your favorite Truffle products.
- Turn into a BEEF STROGANOFF (or Chicken) by: searing small pieces of sirloin or filet mignon, onions, garlic. Use mushroom soup as sauce to cook meat mixture. When done, add Dijon mustard and crème fraiche or sour cream, top with chopped fresh parsley. Serve over rice or buttered egg noodles. Don't forget salt & pepper!
- Sauté your favorite combination of mushrooms and add to your mushroom soup or mushroom sauce.

- Add a tablespoon, or two, of Parmigiano Reggiano or Grana Padano and some fresh basil.
- Use as a delicious and vegetable-full pasta sauce.
- Use as a vegetable base for your favorite grilled protein, such as steak, chicken breast or seafood.
- Use as a vegan stew to serve over a bed of buttery basmati or brown rice.
- Brown 1 pound of ground beef very well, add the sauce to it and immediately have a meat and vegetable pasta sauce.

VEGAN WILD MUSHROOM POTAGE
A mix of East meets West mushrooms: Porcinis, Shitakes, Black Wood Ear & Oyster Mushrooms, Mushroom Broth, GF Oat meal, Black Beans, Lacinato Kale & Farro (Available w/out Farro). This comforting & satiating potage is almost more protein-dense than a full meat meal. Yet, it's so light and low fat. This soup is a beautiful and updated version of an old childhood favorite of mine. Luxurious and velvety, yet dairy free and light, and so comforting, made with my chicken bone broth, green split peas and tons of fresh vegetables and herbs. The slightly salty smoked ham is a perfect compliment to the sweetness of the split peas. The ham is pasture raised, 100% naturally cured and no sugars added. Additional English sweet peas, sliced carrots and chopped smoked ham make this a yummy and satisfying one bowl meal. Don’t forget the hot bread!

- Heat soup, pour in serving bowls, top with chopped fresh parsley or chives (my favorite💜).
- For extra decadence, add a drizzle of crème fraiche, sour cream or regular cream, then top w chopped fresh herbs, chopped smoked ham, sweet English peas and sliced carrots make this a complete and hearty meal.
