Butternut squash roasted and caramelized with minimal amount of ghee, until naturally sweet and tender. Then, cooked with vegetables and herbs in chicken bone broth, with hint of cinnamon from Ceylon.

Chef's Suggestions
  1. This soup makes an absolutely lovely sauce/base for your favorite raviolis, such as butternut squash, spicy sausage, ricotta or ricotta and spinach. Top with your favorite grated Parmesan, Asiago or Romano, top with chopped parsley to add freshness.
Roasted Chestnut and Porcini Soup

ROASTED CHESTNUT AND PORCINI (Contains Dairy: Ghee)

Made with the lovely chicken bone broth, this soup is so luxurious and velvety, you will be sure to think there is cream in it!! The only dairy is a small amount of ghee. Whole Chestnuts are roasted to perfection and add a creamy sweetness to a lovely Porcini-heavy mélange of mushrooms. High quality Spanish Port adds additional complexity. And biting into the whole roasted chestnuts is icing on the cake♥️

Chef's Suggestions
  1. Simply heat your soup in a saucepan and divide the whole chestnuts between your servings.
    a) Top with Chopped fresh parsley
    b) Add your favorite Truffle or truffle product, such as truffle salt, truffle oil...
  2. For a more decadent soup entrée for two: Add your favorite crab meat, seared sea scallops, garlic sautéed prawns.
  3. If desired, add cream.

My top seller. The fresh wild mushrooms & the rich beef bone broth make a magical union in this richly delicious soup. An anti-inflammatory soup, a great way to enhance protein intake w/out heaviness of meats.

Chef's Suggestions
  1. Use as sauce/base for: Pastas, Gourmet Raviolis, Meatballs, Gourmet Sausages. Add sautéed mushrooms, sprinkle with your favorite Truffle products.
  2. Turn into a BEEF STROGANOFF (or Chicken) by: searing small pieces of sirloin or filet mignon, onions, garlic. Use mushroom soup as sauce to cook meat mixture. When done, add Dijon mustard and crème fraiche or sour cream, top with chopped fresh parsley. Serve over rice or buttered egg noodles. Don't forget salt & pepper!

This soup is a beautiful and updated version of an old childhood favorite of mine. Luxurious and velvety, yet dairy free and light, and so comforting, made with my chicken bone broth, green split peas and tons of fresh vegetables and herbs. The slightly salty smoked ham is a perfect compliment to the sweetness of the split peas. The ham is pasture raised, 100% naturally cured and no sugars added. Additional English sweet peas, sliced carrots and chopped smoked ham make this a yummy and satisfying one bowl meal. Don’t forget the hot bread!
