CHICKEN BONE BROTH SOUPS
**NOTE: Chicken bone broth is nutritionally as rich, if not richer, in protein than beef bone broth. This broth is made with chicken bones, chicken feet for additional collagen/protein and tons of fresh vegetables and herbs. – Aryan Alexandra Abbassi
BROCCOLINI & CHEESE SOUP (CONTAINS DAIRY – CREAM FREE)
This is probably my most decadent soup. Though will be the lightest and most delectable version of Broccoli & Cheese soup you have ever tried. Using organic broccolini, chicken bone broth, celery and onions, this soup gets its ultra-creaminess from a small amount of organic Whole Milk and cheeses (English Cheddar, Italian Taleggio, Fontina & Parmigiano Reggiano).
MOROCCAN SPICED CHICKPEA, CHICKEN & VEGETABLES (DF)
Chicken, garbanzo beans and vegetables cooked in chicken bone broth with warm and rich flavors of Morocco (cinnamon, cumin & cardamom), and the tangy flavor of preserved lemons makes this a hearty, but light, year round soup. For added freshness, serve with chopped fresh cilantro.
CARAMELIZED FENNEL, CANNELLINI BEANS, KALE & ITALIAN SAUSAGE (DF)
This soup is like an Italian Tuscan soup. Fennel caramelized to perfection, then cooked in chicken bone broth, with Lacinato kale, Cannellini beans and all natural Italian fennel sausage (free of nitrates or nitrites).
ROASTED BUTTERNUT SQUASH WITH BROWNED GHEE – (CONTAINS DAIRY/GHEE)
Butternut squash roasted and caramelized with minimal amount of ghee, until naturally sweet and tender. Then, cooked with vegetables and herbs in chicken bone broth, with hint of cinnamon from Ceylon.
CELERY ROOT WITH ROASTED APPLES & COCONUT (DF)
Celery root has the flavors of celery and fresh parsley. Adding sweetly roasted apples and lean, but creamy and dairy free coconut milk, and chicken bone broth makes this one the richest light and lean soups ever. It’s wonderful as a soup or as sauce for Asian inspired stir fries served over rice or Asian noodles.
ROASTED SUMMER CORN (DF)
Fresh, organic yellow and white corn kernels caramelized to perfection and cooked in chicken bone broth with additional vegetables and herbs. A very light soup, though so creamy and rich in texture and flavor.
CHICKEN-BARLEY (DF / CONTAINS GLUTEN)
Seasonal Vegetables, shredded organic chicken & chicken bone broth add amazingly delicious flavors to nutty and chewy barley, a fiber and antioxidant filled whole grain. For added freshness, add any of your favorite chopped fresh herbs (parsley, cilantro, tarragon….).
SAFFRON CHICKEN WITH WILD RICE & ROASTED ROOT VEGETABLES (DF)
Enriched with highly aromatic flavors and colors of gorgeous Persian Saffron, this delicious soup contains root vegetables (celery root, rutabaga, parsnips and carrots), roasted to caramelized sweetness, wild rice and shredded organic chicken, cooked in my chicken bone broth.
CHICKEN NOODLE WITH SPRING VEGETABLES (DF – CONTAINS GLUTEN)
For kids of all ages. Seasonal Vegetables, shredded organic chicken simmering in rich chicken bone broth and noodles. A true comfort food. Sprinkle some fresh chopped parsley and a spoon (or two) of Parmigiano Reggiano never hurts, either.
TOMATO BASIL (DF)
Fresh heirloom tomatoes and fresh basil are the highlights of this family favorite soup, cooked with chicken bone broth. Luxurious and creamy tasting, though entirely dairy free.
CURRIED CARROTS & COCONUT (DF)
This soup is gorgeous in color and flavor. An extremely light, yet nutrition-packed soup that also works great as a sauce for Asian-inspired stir fries.
Sweet, roasted carrots cooked with warm flavors of my homemade curry (turmeric, coriander, cumin) in rich chicken bone broth, fresh ginger & lemongrass, finished off with the creamy and tropical flavors of shredded coconut and coconut milk, make this a year round darling of soups (and sauces).
For added freshness, add a squeeze of fresh lemon or lime and some chopped fresh cilantro.
VICHYSSOISE (CONTAINS MILK/Ghee)
A traditional French soup usually served chilled in Summer in France. It is equally delicious hot. Combination of leeks and potatoes sautéed in ghee and cooked in beautiful chicken bone broth is so comforting and delicious. I have omitted the cream for a leaner product. But adding a little cream before serving makes this soup even more delectable.
CURRIED ROASTED RED BEETS & COCONUT (DF)
This is the roasted red beet version of the Curried Carrot and Coconut soup.
The red beets add a very earthly root vegetable flavor to this soup, not to mention the fabulous fuchsia color. This soup also makes a wonderful and light sauce for Asian-inspired stir fries over rice or Asian noodles.
CLASSIC THAI CHICKEN AND COCONUT SOUP (TOM KHA KEI)
Gets its richly dynamic flavor from quintessential Thai ingredients: milk, lemongrass, fresh ginger, lime juice, fish sauce, chile paste, basil, cilantro and coconut milk.
GREEK AVGOLEMONO SOUP WITH WILD RICE & SPRING VEGETABLES – (CONTAINS EGGS & DAIRY)
Avgolemono in Greek means “egg-lemon.” This is the Greek version of chicken & rice soup with fresh, seasonal vegetables. Traditionally, eggs, lemon juice and cream are used to thicken and enrich this velvety soup.
I use eggs and whole milk to keep the soup velvety and tangy, but with much fewer fatty calories of heavy cream.
